At class today we had a presentation on the best known, amd most liked Thai dishes around the world. The results come from a global survey recently conducted around Asia, in America, in Europe and in Africa. Apparently there is significant tourist traffic from Africa to Thailand these days.

Roast Duck Red Curry is on our syllabus today, what a fabulous dish! In my humble opinion, it deserves to be within the Top 3, if not indeed at the Top of the chart. The curry paste has 10 ingredients, to be pounded (none of this blender/food processor amateur nonsense, of course) and in sequence, to let off maximum fragrance. In addition there are 15 more items to finish the dish, plus a few more ingredients for the seasoning sauce. The order is precise, and must be observed lest 'the taste will be ruined'. I was about to levitate when I tasted my first spoonful, my first ever Red Curry, with Roast Duck. I chose this picture to illustrate that magic moment when the duck was mixed with the curry .... it must be like Adam being introduced to Eve, or should it be the other way around?
