Austrian bakers were making these pastries to resemble the emblem on the Turkish flag. Eventually the Turks were defeated and the Austrians kept the shape of the Croissants, as a sign to commemorate the victory. A century later Princess Marie Antoniette married the future King Louis of France and Croissants were introduced at the Chateau du Versailles. The pastries were well received and adopted by France. 'Boulangers Viennois' later perfected the recipe that made Croissants light & fluffy as they are today."
